Description

Make delicious Spicy Honey Chicken & Roasted Broccoli Bowls. This recipe is easy and full of flavor.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 head of broccoli, cut into florets
  • 2 tablespoons olive oil
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon sriracha (or more, to taste)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Cooked rice, for serving
  • Sesame seeds, for garnish (optional)
  • Green onions, chopped, for garnish (optional)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the broccoli florets with 1 tablespoon of olive oil, salt, and pepper on a baking sheet. Roast for 15-20 minutes, or until tender and slightly charred.
  3. In a bowl, whisk together the honey, soy sauce, sriracha, rice vinegar, and sesame oil.
  4. Heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat.
  5. Add the chicken and cook until browned on all sides.
  6. Pour the honey-sriracha sauce over the chicken and cook, stirring, until the sauce thickens and coats the chicken, about 2-3 minutes.
  7. Serve the chicken and roasted broccoli over cooked rice.
  8. Garnish with sesame seeds and green onions, if desired.

Notes

  • Adjust the sriracha to control the spice level.
  • You can add other vegetables to the roasting pan, like bell peppers or carrots.
  • Leftovers are great for lunch the next day.
