Make delicious Spicy Honey Chicken & Roasted Broccoli Bowls. This recipe is easy and full of flavor.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 head of broccoli, cut into florets
- 2 tablespoons olive oil
- 1/4 cup honey
- 2 tablespoons soy sauce
- 1 tablespoon sriracha (or more, to taste)
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- Salt and pepper to taste
- Cooked rice, for serving
- Sesame seeds, for garnish (optional)
- Green onions, chopped, for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the broccoli florets with 1 tablespoon of olive oil, salt, and pepper on a baking sheet. Roast for 15-20 minutes, or until tender and slightly charred.
- In a bowl, whisk together the honey, soy sauce, sriracha, rice vinegar, and sesame oil.
- Heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add the chicken and cook until browned on all sides.
- Pour the honey-sriracha sauce over the chicken and cook, stirring, until the sauce thickens and coats the chicken, about 2-3 minutes.
- Serve the chicken and roasted broccoli over cooked rice.
- Garnish with sesame seeds and green onions, if desired.
Notes
- Adjust the sriracha to control the spice level.
- You can add other vegetables to the roasting pan, like bell peppers or carrots.
- Leftovers are great for lunch the next day.
