Description
A simple one-pan dinner featuring pesto chicken, tortellini, asparagus, and tomatoes.
Ingredients
- 1 pound chicken breasts, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 (9 ounce) package refrigerated cheese tortellini
- 1 bunch asparagus, trimmed and cut into 1-inch pieces
- 1 pint cherry tomatoes, halved
- 1/2 cup pesto
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Toss chicken with olive oil, salt, and pepper.
- Spread chicken in a single layer on a baking sheet.
- Add tortellini, asparagus, and tomatoes to the baking sheet.
- Drizzle with pesto and toss to combine.
- Bake for 20-25 minutes, or until chicken is cooked through and vegetables are tender.
- Serve immediately.

- You can use store-bought or homemade pesto.
- Feel free to add other vegetables like bell peppers or zucchini.
