Ingredients

  • 1 box yellow cake mix
  • 1 cup fresh strawberries, pureed
  • 1/2 cup lemon juice
  • 1/4 cup vegetable oil
  • 4 large eggs
  • For the frosting:
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/4 cup strawberry puree
  • 2 tablespoons lemon juice
  • Fresh strawberries for garnish


Instructions

  1. Preheat oven to 350°F (175°C). Line muffin tins with cupcake liners.
  2. In a large bowl, combine cake mix, strawberry puree, lemon juice, oil, and eggs. Mix until combined.
  3. Fill cupcake liners about 2/3 full.
  4. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  5. Let cupcakes cool completely.
  6. For the frosting: Beat butter until smooth. Gradually add powdered sugar, strawberry puree, and lemon juice. Beat until light and fluffy.
  7. Frost cupcakes and garnish with fresh strawberries.
