A delicious Strawberry Vanilla Layer Cake with Whipped Cream Frosting.


Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 cup finely chopped fresh strawberries
  • For the frosting: 2 cups heavy cream, 1/2 cup powdered sugar, 1 teaspoon vanilla extract


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Whisk together flour, baking powder, baking soda, and salt.
  3. Cream butter and sugar until light and fluffy. Beat in eggs one at a time, then vanilla.
  4. Gradually add dry ingredients alternately with buttermilk, beginning and ending with dry ingredients.
  5. Gently fold in strawberries.
  6. Divide batter between prepared pans and bake for 30-35 minutes.
  7. Let cakes cool completely.
  8. For frosting, whip heavy cream, powdered sugar, and vanilla until stiff peaks form.
  9. Frost the cake and enjoy!

Notes

  • You can substitute frozen strawberries, thawed and drained.
  • For a richer flavor, use a vanilla bean.
