Description
A delicious Strawberry Vanilla Layer Cake with Whipped Cream Frosting.
Ingredients
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup (2 sticks) unsalted butter, softened
- 2 cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 1 cup finely chopped fresh strawberries
- For the frosting: 2 cups heavy cream, 1/2 cup powdered sugar, 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Whisk together flour, baking powder, baking soda, and salt.
- Cream butter and sugar until light and fluffy. Beat in eggs one at a time, then vanilla.
- Gradually add dry ingredients alternately with buttermilk, beginning and ending with dry ingredients.
- Gently fold in strawberries.
- Divide batter between prepared pans and bake for 30-35 minutes.
- Let cakes cool completely.
- For frosting, whip heavy cream, powdered sugar, and vanilla until stiff peaks form.
- Frost the cake and enjoy!
Notes
- You can substitute frozen strawberries, thawed and drained.
- For a richer flavor, use a vanilla bean.
- Make sure your butter is softened but not melted.
