Corn

Instructions
Preheat your grill or grill pan to medium-high heat. Brush the corn kernels with a light coating of oil and season with a pinch of salt and pepper. Grill the corn, turning occasionally, until it’s lightly charred and tender, about 5-7 minutes. Remove from heat and set aside.
In a large pot, bring the rice and water (or broth) to a boil. Once boiling, reduce the heat to low, cover, and simmer until the rice is tender and the liquid is absorbed, about 15-20 minutes. Fluff the rice with a fork and set aside.
In a large bowl, combine the grilled corn, diced or shredded chicken, and cooked rice. Drizzle with lime juice and sprinkle with chopped cilantro. Toss gently to evenly distribute the ingredients.
Serve the Street Corn Chicken Rice Bowl warm, garnished with additional cilantro, a sprinkle of chili powder, and a wedge of lime, if desired.
