Description
A simple one-pan dinner featuring pesto chicken, tortellini, asparagus, and tomatoes.
Ingredients
- 1 pound chicken breasts, cut into bite-sized pieces
- 1 (9 ounce) package cheese tortellini
- 1 bunch asparagus, trimmed and cut into 1-inch pieces
- 1 pint cherry tomatoes, halved
- 1/4 cup pesto
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a large oven-safe skillet, toss chicken, tortellini, asparagus, and tomatoes with olive oil, salt, and pepper.
- Bake for 20 minutes.
- Stir in pesto.
- Bake for another 5 minutes, or until chicken is cooked through and tortellini is tender.
- Serve immediately.
Notes
- You can substitute other vegetables like zucchini or bell peppers.
- Adjust cooking time based on your oven.
- For extra flavor, add a sprinkle of Parmesan cheese before serving.
