Ingredients
- 4 cups chopped sweet bell peppers (about 4-6 peppers)
- 1 cup chopped yellow onion
- 1/2 cup apple cider vinegar
- 1/2 cup granulated sugar
- 1/4 cup water
- 1 tablespoon salt
- 1 teaspoon mustard seeds
- 1/2 teaspoon celery seeds
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Combine chopped bell peppers and onion in a large pot.
- Add apple cider vinegar, sugar, water, salt, mustard seeds, celery seeds, and red pepper flakes (if using).
- Stir well to combine.
- Bring the mixture to a boil over medium-high heat.
- Reduce heat to low, cover, and simmer for 20-25 minutes, stirring occasionally, until peppers and onions are tender.
- Remove from heat.
- For canning: Ladle hot relish into sterilized jars, leaving 1/2 inch headspace. Process in a boiling water bath for 10 minutes.
- For immediate use: Let cool before serving.
