Ingredients

  • 4 cups chopped sweet bell peppers (about 4-6 peppers)
  • 1 cup chopped yellow onion
  • 1/2 cup apple cider vinegar
  • 1/2 cup granulated sugar
  • 1/4 cup water
  • 1 tablespoon salt
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon celery seeds
  • 1/4 teaspoon red pepper flakes (optional)


Instructions

  1. Combine chopped bell peppers and onion in a large pot.
  2. Add apple cider vinegar, sugar, water, salt, mustard seeds, celery seeds, and red pepper flakes (if using).
  3. Stir well to combine.
  4. Bring the mixture to a boil over medium-high heat.
  5. Reduce heat to low, cover, and simmer for 20-25 minutes, stirring occasionally, until peppers and onions are tender.
  6. Remove from heat.
  7. For canning: Ladle hot relish into sterilized jars, leaving 1/2 inch headspace. Process in a boiling water bath for 10 minutes.
