Description
A classic sweet potato casserole topped with melted marshmallows, perfect for holidays and gatherings.
Ingredients
- 4 cups mashed sweet potatoes (about 2 lbs)
- 1/2 cup unsalted butter, melted
- 1/2 cup granulated sugar
- 1/4 cup milk
- 2 large eggs, beaten
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- Pinch of salt
- 2 cups mini marshmallows
Instructions
- Preheat oven to 350ยฐF (175ยฐC).
- In a large bowl, combine mashed sweet potatoes, melted butter, sugar, milk, beaten eggs, vanilla extract, cinnamon, nutmeg, and salt. Mix well until smooth.
- Pour the sweet potato mixture into a greased 9ร13 inch baking dish.
- Bake for 25-30 minutes, or until the casserole is heated through.
- Remove from oven and evenly spread the mini marshmallows over the top.
- Return to the oven and bake for another 5-10 minutes, or until marshmallows are golden brown and melted.
- Serve warm.
Notes
- For a richer flavor, you can use heavy cream instead of milk.
- Add chopped pecans to the marshmallow topping for extra crunch.
- Ensure sweet potatoes are mashed smoothly to avoid lumps.
