Ingredients

  • 4 cups mashed sweet potatoes (about 2 lbs)
  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1/4 cup milk
  • 2 large eggs, beaten
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt
  • 2 cups mini marshmallows


Instructions

  1. Preheat oven to 350ยฐF (175ยฐC).
  2. In a large bowl, combine mashed sweet potatoes, melted butter, sugar, milk, beaten eggs, vanilla extract, cinnamon, nutmeg, and salt. Mix well until smooth.
  3. Pour the sweet potato mixture into a greased 9ร—13 inch baking dish.
  4. Bake for 25-30 minutes, or until the casserole is heated through.
  5. Remove from oven and evenly spread the mini marshmallows over the top.
  6. Return to the oven and bake for another 5-10 minutes, or until marshmallows are golden brown and melted.
  7. Serve warm.
