A high-protein vegan bowl featuring sweet potatoes and lentils with warm spices.


Ingredients

  • 1 large sweet potato, peeled and diced
  • 1 cup brown lentils, rinsed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper (optional)
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)


Instructions

  1. Preheat oven to 400°F (200°C). Toss sweet potato with olive oil, salt, and pepper. Roast for 20-25 minutes.
  2. Sauté onion in a pot until softened. Add garlic, cumin, coriander, turmeric, and cayenne (if using). Cook for 1 minute.
  3. Add lentils and vegetable broth. Bring to a boil, then simmer for 20-25 minutes, or until lentils are tender.
  4. Season with salt and pepper.
  5. Assemble bowls: Add lentils, sweet potato, and garnish with cilantro. Serve with lime wedges.
