A high-protein vegan bowl featuring sweet potatoes and lentils with warm spices.
Ingredients
- 1 large sweet potato, peeled and diced
- 1 cup brown lentils, rinsed
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper (optional)
- 4 cups vegetable broth
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
- Lime wedges (for serving)
Instructions
- Preheat oven to 400°F (200°C). Toss sweet potato with olive oil, salt, and pepper. Roast for 20-25 minutes.
- Sauté onion in a pot until softened. Add garlic, cumin, coriander, turmeric, and cayenne (if using). Cook for 1 minute.
- Add lentils and vegetable broth. Bring to a boil, then simmer for 20-25 minutes, or until lentils are tender.
- Season with salt and pepper.
- Assemble bowls: Add lentils, sweet potato, and garnish with cilantro. Serve with lime wedges.
Notes
- Adjust spices to your preference.
- You can add other vegetables like spinach or kale.
