Ingredients
- 2 cups mashed cooked sweet potatoes (about 2 large)
- 3/4 cup granulated sugar
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 2 large eggs, lightly beaten
- 1 1/2 cups evaporated milk
- 1 (9-inch) unbaked pie crust
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine mashed sweet potatoes, sugar, salt, cinnamon, ginger, and nutmeg.
- Stir in the beaten eggs and evaporated milk until well combined.
- Pour the filling into the unbaked pie crust.
- Bake for 50-60 minutes, or until a knife inserted near the center comes out clean.
- Let cool completely before serving.
Notes
- For smoother filling, you can press cooked sweet potatoes through a sieve.
- Chill the pie for at least 2 hours before serving for best texture.
