Delicious and easy sweet potato taco bowls. A healthy and flavorful weeknight dinner option.
Ingredients
- 1 large sweet potato, peeled and diced
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 1 pound ground turkey or beef
- 1 packet taco seasoning
- 1 cup cooked quinoa or rice
- Toppings: shredded lettuce, salsa, avocado, Greek yogurt or sour cream, cheese
Instructions
- Preheat oven to 400°F (200°C).
- Toss sweet potato with olive oil, chili powder, cumin, salt, and pepper.
- Roast sweet potato for 20-25 minutes, or until tender.
- Cook ground meat according to taco seasoning package instructions.
- Assemble bowls: quinoa/rice, meat, sweet potato, and toppings.

- For a vegetarian option, use black beans or lentils instead of meat.
