  • Rice vinegar (1 tablespoon)
  • Cornstarch (1 tablespoon)
  • Garlic (2 cloves), minced
  • Ginger (1 teaspoon), grated
  • Red pepper flakes (1/4 teaspoon, optional)
  • Cooked rice (3 cups)
  • Green onions, chopped (for garnish)


Instructions

  1. In a bowl, whisk together pineapple juice, soy sauce, brown sugar, rice vinegar, cornstarch, garlic, ginger, and red pepper flakes.
  2. In a large skillet or wok, cook chicken over medium-high heat until browned.
  3. Pour sauce over chicken and add pineapple chunks.
