Ingredients
- Chicken breasts (1.5 lbs), cut into bite-sized pieces
- Pineapple chunks (1 can, 20 oz), drained, reserve juice
- Soy sauce (1/4 cup)
- Brown sugar (2 tablespoons)
- Rice vinegar (1 tablespoon)
- Cornstarch (1 tablespoon)
- Garlic (2 cloves), minced
- Ginger (1 teaspoon), grated
- Red pepper flakes (1/4 teaspoon, optional)
- Cooked rice (3 cups)
- Green onions, chopped (for garnish)
Instructions
- In a bowl, whisk together pineapple juice, soy sauce, brown sugar, rice vinegar, cornstarch, garlic, ginger, and red pepper flakes.
- In a large skillet or wok, cook chicken over medium-high heat until browned.
- Pour sauce over chicken and add pineapple chunks.
- Simmer until sauce thickens and chicken is cooked through (about 5-7 minutes).
- Serve chicken and pineapple over cooked rice.
- Garnish with green onions.
Notes
- You can use fresh pineapple, about 2 cups, instead of canned.
- For a spicier dish, add more red pepper flakes.
