A simple and delicious Teriyaki Chicken & Veggie Sheet Pan Dinner.


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, cut into wedges
  • 1 cup broccoli florets
  • 1/2 cup teriyaki sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • Cooked rice, for serving


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, whisk together teriyaki sauce, soy sauce, sesame oil, ginger, and garlic.
  3. Place chicken and vegetables on a sheet pan.
  4. Pour teriyaki mixture over chicken and vegetables. Toss to coat.
  5. Bake for 20-25 minutes, or until chicken is cooked through and vegetables are tender.
  6. Serve over cooked rice.
