Description
A quick and easy cornbread stuffing recipe using Jiffy mix, perfect for Thanksgiving or any holiday meal.
Ingredients
- 1 box (8.5 ounces) Jiffy Corn Muffin Mix
- 2 tablespoons butter
- 1 cup chopped onion
- 1/2 cup chopped celery
- 1/2 cup chicken broth
- 1 egg, beaten
- 1 teaspoon poultry seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Prepare Jiffy Corn Muffin Mix according to package directions. Bake and let cool. Crumble the cornbread.
- Melt butter in a skillet over medium heat. Add onion and celery and cook until softened, about 5-7 minutes.
- In a large bowl, combine crumbled cornbread, cooked onion and celery, chicken broth, beaten egg, poultry seasoning, salt, and pepper. Mix well.
- Transfer the mixture to a greased baking dish.
- Bake at 350°F (175°C) for 25-30 minutes, or until heated through and lightly browned.
Notes
- For a richer flavor, you can add cooked sausage or bacon bits.
- Add a splash of milk or water if the mixture seems too dry.
- Can be made ahead and reheated before serving.
