Ingredients

  • Pasta (spaghetti, linguine, penne, or farfalle)
  • Olive oil
  • Garlic, minced
  • Fresh tomatoes (or canned diced tomatoes)
  • Fresh spinach
  • Shrimp, peeled and deveined
  • Salt and pepper
  • Parmesan cheese (optional)
  • Basil leaves (optional)


Instructions

  • Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside, reserving a cup of the cooking liquid.
  • In a large skillet or sauté pan, heat a tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant and lightly golden.
  • Add the fresh tomatoes (or canned diced tomatoes) and let them simmer for 5-7 minutes, stirring occasionally, until they begin to break down and release their juices.
  • Add the fresh spinach to the pan and gently fold it into the tomato mixture. Allow the spinach to wilt, which should take about 2-3 minutes.
  • Pour in the reserved pasta cooking liquid and let the sauce simmer for an additional 5 minutes, or until it has thickened slightly.
  • Carefully fold in the cooked pasta, making sure to coat each strand evenly with the tomato-spinach sauce.
  • Add the shrimp to the pan and cook for 3-5 minutes, or until the shrimp are opaque and cooked through.
  • Season the dish with salt and pepper, to taste.
  • Serve the tomato spinach shrimp pasta hot, garnished with freshly grated Parmesan cheese or a sprinkle of chopped fresh basil, if desired.
