Ingredients
- Pasta (spaghetti, linguine, penne, or farfalle)
- Olive oil
- Garlic, minced
- Fresh tomatoes (or canned diced tomatoes)
- Fresh spinach
- Shrimp, peeled and deveined
- Salt and pepper
- Parmesan cheese (optional)
- Basil leaves (optional)
Instructions
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside, reserving a cup of the cooking liquid.
- In a large skillet or sauté pan, heat a tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant and lightly golden.
- Add the fresh tomatoes (or canned diced tomatoes) and let them simmer for 5-7 minutes, stirring occasionally, until they begin to break down and release their juices.
- Add the fresh spinach to the pan and gently fold it into the tomato mixture. Allow the spinach to wilt, which should take about 2-3 minutes.
- Pour in the reserved pasta cooking liquid and let the sauce simmer for an additional 5 minutes, or until it has thickened slightly.
- Carefully fold in the cooked pasta, making sure to coat each strand evenly with the tomato-spinach sauce.
- Add the shrimp to the pan and cook for 3-5 minutes, or until the shrimp are opaque and cooked through.
- Season the dish with salt and pepper, to taste.
- Serve the tomato spinach shrimp pasta hot, garnished with freshly grated Parmesan cheese or a sprinkle of chopped fresh basil, if desired.
