Ingredients
- Boneless, skinless chicken breasts or thighs
- Sun-dried tomatoes
- Heavy cream
- Parmesan cheese
- Garlic
- Pasta (such as penne or fusilli)
- Olive oil

Instructions
- Prepare the Chicken: Season the chicken breasts or thighs with salt and pepper. Heat a large skillet over medium-high heat and add a drizzle of olive oil. Add the chicken and cook for 4-6 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set it aside.
- Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions, or until al dente. Drain the pasta and set it aside.
- Make the Sauce: In the same skillet used to cook the chicken, add the minced garlic and sauté for 1-2 minutes, or until fragrant. Pour in the heavy cream and let it simmer for 2-3 minutes, stirring frequently, until the sauce has slightly thickened. Grate in the Parmesan cheese and continue to stir until the cheese has melted and the sauce is smooth and creamy.
- Assemble the Dish: Add the cooked pasta and sautéed chicken to the creamy sauce, and toss to combine. Fold in the sun-dried tomatoes.
