A delicious and easy-to-make strawberry shortcake cake.
Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/2 cup (1 stick) unsalted butter, melted
- 1 teaspoon vanilla extract
- 4 cups fresh strawberries, sliced
- 1/4 cup granulated sugar (for strawberries)
- 2 cups heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract (for whipped cream)
Instructions
- Preheat oven to 375°F (190°C). Grease and flour a 9-inch round cake pan.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together milk, melted butter, and vanilla extract.
- Add wet ingredients to dry ingredients and mix until just combined.
- Pour batter into prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool completely.
- While the cake cools, prepare the strawberries: In a bowl, toss sliced strawberries with 1/4 cup sugar. Let sit for at least 15 minutes.
- Make the whipped cream: In a chilled bowl, beat heavy cream until soft peaks form. Add powdered sugar and vanilla extract; beat until stiff peaks form.
- Slice the cake horizontally into two layers.
- Place one layer on a serving plate. Top with half of the strawberries and half of the whipped cream.
- Place the second cake layer on top. Top with remaining strawberries and whipped cream.
- Serve immediately or chill for later.
Notes
- You can use store-bought whipped cream to save time.
- Feel free to add a splash of lemon juice to the strawberries for extra flavor.
- For a richer cake, use buttermilk instead of milk.
