These warm apple cinnamon muffins are perfect for cozy January mornings.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 medium apple, peeled and diced


Instructions

  1. Preheat oven to 400°F (200°C). Line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  3. In a separate bowl, whisk together milk, oil, egg, and vanilla extract.
  4. Pour wet ingredients into dry ingredients and stir until just combined.
  5. Gently fold in diced apples.
  6. Fill muffin liners about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool in the tin for a few minutes before transferring to a wire rack.

Notes

  • For extra flavor, sprinkle the tops with cinnamon sugar before baking.
  • You can substitute applesauce for some of the oil.
