A hearty beef stew with rich flavors, perfect for fall dinners. This recipe combines tender beef, vegetables, and spices in a savory broth.
Ingredients
- 2 lbs beef stew meat, cubed
- 1 large onion, chopped
- 3 carrots, sliced
- 3 potatoes, diced
- 4 cloves garlic, minced
- 4 cups beef broth
- 1 tbsp tomato paste
- 1 tsp thyme
- 1 tsp rosemary
- 1 bay leaf
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef and brown on all sides. Remove and set aside.
- In the same pot, sauté onions and garlic until soft.
- Add carrots and potatoes, cook for 5 minutes.
- Return beef to the pot. Stir in tomato paste, thyme, rosemary, and bay leaf.
- Pour in beef broth. Bring to a boil, then reduce heat to low.
- Simmer for 1.5 to 2 hours, until beef is tender.
- Season with salt and pepper. Remove bay leaf before serving.
Notes
- For extra flavor, deglaze the pot with red wine after browning the beef.
- Store leftovers in an airtight container for up to 3 days.
