Ingredients

  • 2 lbs beef stew meat, cubed
  • 1 large onion, chopped
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 1 tbsp tomato paste
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tbsp olive oil


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef and brown on all sides. Remove and set aside.
  3. In the same pot, sauté onions and garlic until soft.
  4. Add carrots and potatoes, cook for 5 minutes.
  5. Return beef to the pot. Stir in tomato paste, thyme, rosemary, and bay leaf.
  6. Pour in beef broth. Bring to a boil, then reduce heat to low.
  7. Simmer for 1.5 to 2 hours, until beef is tender.
  8. Season with salt and pepper. Remove bay leaf before serving.
