Description

Soft and delicious apple cinnamon Greek yogurt muffins.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 large egg
  • 1 cup Greek yogurt
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 medium apple, peeled and diced


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Whisk together flour, baking soda, cinnamon, and salt.
  3. In a separate bowl, combine sugars, egg, yogurt, applesauce, and vanilla.
  4. Add wet ingredients to dry ingredients; mix until just combined.
  5. Fold in diced apple.
  6. Fill muffin cups.
  7. Bake for 18-20 minutes.
  8. Let cool before serving.
