Description

Delicious apple cinnamon muffins with a sweet streusel topping.


Ingredients

  • 2 cups all-purpose flour
  • ¾ cup granulated sugar
  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ cup milk
  • ¼ cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 medium apples, peeled and diced

Streusel Topping:

  • ½ cup all-purpose flour
  • ⅓ cup packed light brown sugar
  • ⅓ cup unsalted butter, cold and cubed
  • 1 teaspoon ground cinnamon


Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
  3. In a separate bowl, whisk together milk, melted butter, egg, and vanilla.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Gently fold in the diced apples.
  6. Make the streusel topping: In a bowl, combine flour, brown sugar, and cinnamon. Cut in cold butter until the mixture resembles coarse crumbs.
  7. Fill muffin liners about ⅔ full with batter. Sprinkle streusel topping over the muffins.
  8. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
