Description
Delicious apple cinnamon muffins with a sweet streusel topping.
Ingredients
- 2 cups all-purpose flour
- ¾ cup granulated sugar
- 2 ½ teaspoons baking powder
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ cup milk
- ¼ cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 2 medium apples, peeled and diced
Streusel Topping:
- ½ cup all-purpose flour
- ⅓ cup packed light brown sugar
- ⅓ cup unsalted butter, cold and cubed
- 1 teaspoon ground cinnamon
Instructions
- Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
- In a separate bowl, whisk together milk, melted butter, egg, and vanilla.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Gently fold in the diced apples.
- Make the streusel topping: In a bowl, combine flour, brown sugar, and cinnamon. Cut in cold butter until the mixture resembles coarse crumbs.
- Fill muffin liners about ⅔ full with batter. Sprinkle streusel topping over the muffins.
- Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
Notes
- You can substitute the apples with other fruits like peaches or berries.
- For extra flavor, add a pinch of nutmeg to the batter.
- Store muffins in an airtight container at room temperature for up to 3 days.
