Description
Delicious shortbread bars with a sweet apricot jam filling.
Ingredients
- 2 1/4 cups all-purpose flour
- 1 cup (2 sticks) unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1 cup apricot jam
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, cream together butter and sugar.
- Add flour and salt; mix until crumbly.
- Press half of the mixture into a baking pan.
- Spread apricot jam over the crust.
- Sprinkle remaining crumb mixture over the jam.
- Bake for 30-35 minutes.
- Let cool completely before cutting.
Notes
- You can use homemade or store-bought apricot jam.
- For a richer flavor, use brown sugar.
- Ensure the bars are completely cool before cutting for clean slices.
