Description

This is a recipe for a delicious and authentic shrimp and sausage gumbo.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 pound andouille sausage, sliced
  • 1/2 cup all-purpose flour
  • 1/2 cup vegetable oil
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 8 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper
  • 1 bay leaf
  • Salt and black pepper to taste
  • Cooked rice, for serving


Instructions

  1. Make a roux: Whisk flour and oil in a pot over medium heat. Cook, stirring constantly, until the roux is the color of peanut butter, about 20-25 minutes.
  2. Add vegetables: Add onion, bell pepper, and celery to the roux. Cook until softened, about 5-7 minutes. Stir in garlic.
  3. Add broth and spices: Slowly whisk in chicken broth. Add thyme, oregano, cayenne pepper, bay leaf, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes.
  4. Add sausage: Add sausage to the gumbo and simmer for 15 minutes.
  5. Add shrimp: Add shrimp and cook until pink, about 3-5 minutes.
  6. Serve: Remove bay leaf. Serve hot over cooked rice.

Notes

  • Adjust the cayenne pepper to your spice preference.
  • You can use other types of sausage.
  • Gumbo tastes even better the next day.
