Description
Simple and delicious baked feta roasted potatoes.
Ingredients
- Potatoes: 1.5 lbs, Yukon gold or similar, quartered
- Feta cheese: 4 oz, block, crumbled
- Olive oil: 3 tablespoons
- Lemon juice: 2 tablespoons
- Dried oregano: 1 teaspoon
- Garlic: 2 cloves, minced
- Salt: To taste
- Black pepper: To taste
Instructions
- Preheat your oven to 400°F (200°C).
- Toss potatoes with olive oil, lemon juice, oregano, garlic, salt, and pepper.
- Spread potatoes in a single layer on a baking sheet.
- Roast for 30-40 minutes, or until golden and tender.
- Sprinkle feta over potatoes during the last 5 minutes of baking.
- Serve hot.
Notes
- Adjust salt and pepper to your preference.
- For extra flavor, add a pinch of red pepper flakes.
- Serve with a side of your favorite protein.
