Ingredients

  • Potatoes: 1.5 lbs, Yukon gold or similar, quartered
  • Feta cheese: 4 oz, block, crumbled
  • Olive oil: 3 tablespoons
  • Lemon juice: 2 tablespoons
  • Dried oregano: 1 teaspoon
  • Garlic: 2 cloves, minced
  • Salt: To taste
  • Black pepper: To taste


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss potatoes with olive oil, lemon juice, oregano, garlic, salt, and pepper.
  3. Spread potatoes in a single layer on a baking sheet.
  4. Roast for 30-40 minutes, or until golden and tender.
  5. Sprinkle feta over potatoes during the last 5 minutes of baking.
  6. Serve hot.
