A simple and flavorful baked Mediterranean chicken and potatoes dish.


Ingredients

  • Chicken thighs: 6, skin on or off
  • Potatoes: 1.5 lbs, small, halved or quartered
  • Olive oil: 3 tablespoons
  • Dried oregano: 1 tablespoon
  • Dried rosemary: 1 teaspoon
  • Garlic: 4 cloves, minced
  • Lemon: 1, juiced
  • Salt: to taste
  • Black pepper: to taste
  • Cherry tomatoes: 1 cup, halved
  • Kalamata olives: 1/2 cup, pitted
  • Feta cheese: 1/4 cup, crumbled (optional)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix olive oil, oregano, rosemary, garlic, lemon juice, salt, and pepper.
  3. Toss potatoes with half of the herb mixture on a baking sheet.
  4. Place chicken on the baking sheet. Rub the remaining herb mixture over the chicken.
  5. Bake for 30 minutes.
  6. Add cherry tomatoes and olives to the baking sheet.
  7. Continue baking for 15-20 minutes, or until chicken is cooked through and potatoes are tender.
  8. Sprinkle with feta cheese, if desired, before serving.
