Description
A simple and flavorful baked Mediterranean chicken and potatoes dish.
Ingredients
- Chicken thighs: 6, skin on or off
- Potatoes: 1.5 lbs, small, halved or quartered
- Olive oil: 3 tablespoons
- Dried oregano: 1 tablespoon
- Dried rosemary: 1 teaspoon
- Garlic: 4 cloves, minced
- Lemon: 1, juiced
- Salt: to taste
- Black pepper: to taste
- Cherry tomatoes: 1 cup, halved
- Kalamata olives: 1/2 cup, pitted
- Feta cheese: 1/4 cup, crumbled (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix olive oil, oregano, rosemary, garlic, lemon juice, salt, and pepper.
- Toss potatoes with half of the herb mixture on a baking sheet.
- Place chicken on the baking sheet. Rub the remaining herb mixture over the chicken.
- Bake for 30 minutes.
- Add cherry tomatoes and olives to the baking sheet.
- Continue baking for 15-20 minutes, or until chicken is cooked through and potatoes are tender.
- Sprinkle with feta cheese, if desired, before serving.
Notes
- Adjust herbs to your preference.
- You can add other vegetables like bell peppers or onions.
- Serve with a side of Greek salad or a simple green salad.
