Description
Make delicious bakery-style blueberry muffins with a sweet streusel topping.
Ingredients
- 2 cups all-purpose flour
- ¾ cup granulated sugar
- 2 ½ teaspoons baking powder
- ½ teaspoon salt
- ½ cup (1 stick) unsalted butter, cold and cubed
- 1 large egg
- ¾ cup milk
- 1 teaspoon vanilla extract
- 2 cups fresh blueberries
- Streusel Topping:
- ½ cup all-purpose flour
- ⅓ cup granulated sugar
- ⅓ cup packed light brown sugar
- ¼ cup (½ stick) unsalted butter, cold and cubed
- ½ teaspoon ground cinnamon
Instructions
- Preheat oven to 400°F (200°C). Line a muffin tin with paper liners.
- Make the streusel topping: Combine flour, sugars, cinnamon, and butter. Use a pastry blender or your fingers to combine until crumbly.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- In a separate bowl, whisk together egg, milk, and vanilla.
- Pour wet ingredients into dry ingredients and mix until just combined.
- Gently fold in blueberries.
- Fill muffin liners about ¾ full.
- Sprinkle generously with streusel topping.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the tin for a few minutes before transferring to a wire rack to cool completely.
Notes
- For best results, use fresh blueberries.
- Don’t overmix the batter.
- You can freeze the muffins for later.
