Description
These banana oatmeal bars are a healthy and delicious breakfast or snack option. They are easy to make and perfect for on-the-go.
Ingredients
- 2 ripe bananas, mashed
- 1/2 cup rolled oats
- 1/4 cup whole wheat flour
- 1/4 cup unsweetened applesauce
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon baking soda
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C). Grease an 8×8 inch baking pan.
- In a medium bowl, combine mashed bananas, applesauce, honey or maple syrup, and vanilla extract.
- In a separate bowl, whisk together rolled oats, whole wheat flour, cinnamon, baking soda, and salt.
- Add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the pan before cutting into bars.
Notes
- For a sweeter bar, add a few chocolate chips or chopped nuts.
- Store bars in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.
