Description

Ingredients

  • 2 ripe bananas, mashed
  • 1 cup plain yogurt
  • 1/2 cup applesauce
  • 1/4 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt


Instructions

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. In a large bowl, mash the bananas.
  3. Add yogurt, applesauce, milk, egg, and vanilla extract. Mix well.
  4. In a separate bowl, whisk together flour, sugar, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet ingredients. Mix until just combined. Do not overmix.
  6. Fill the muffin liners about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For extra flavor, add chocolate chips or chopped nuts.
  • You can substitute whole wheat flour for all-purpose flour.
