These baked banana yogurt donut muffins are a delicious and healthier treat. They combine the flavors of banana bread and donuts.


Ingredients

  • 2 ripe bananas, mashed
  • 1 cup plain yogurt
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Optional toppings: powdered sugar, sprinkles


Instructions

  1. Preheat your oven to 375°F (190°C). Grease or line a muffin tin.
  2. In a bowl, combine mashed bananas, yogurt, melted butter, egg, and vanilla.
  3. In a separate bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fill the muffin cups about 2/3 full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack.
