Quick and easy banana yogurt protein muffins. Perfect for busy mornings.
Ingredients
- 2 ripe bananas, mashed
- 1 cup Greek yogurt
- 2 eggs
- 1/4 cup honey
- 1 teaspoon vanilla extract
- 1 1/2 cups oat flour
- 1 scoop protein powder
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
Instructions
- Preheat oven to 375°F (190°C).
- Mash bananas in a bowl.
- Whisk in yogurt, eggs, honey, and vanilla.
- Add oat flour, protein powder, baking soda, and cinnamon.
- Mix until just combined.
- Fill muffin cups.
- Bake for 18-20 minutes.
- Let cool before serving.
