Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 2 tablespoons sriracha, or to taste
  • 1 tablespoon rice vinegar
  • 1 teaspoon soy sauce
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • Wooden skewers, soaked in water for 30 minutes


Instructions

  1. In a bowl, whisk together mayonnaise, sweet chili sauce, sriracha, rice vinegar, soy sauce, garlic powder, and pepper.
  2. Place chicken cubes in a bowl and pour the sauce over them. Toss to coat evenly.
  3. Marinate the chicken in the refrigerator for at least 30 minutes.
  4. Thread the marinated chicken onto the skewers.
  5. Preheat your grill to medium-high heat.
  6. Grill the skewers for 3-4 minutes per side, or until the chicken is cooked through and slightly charred.
  7. Serve immediately.
