A flavorful and healthy BBQ chicken bowl with sweet potatoes.
Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 large sweet potato, peeled and diced
- 1/2 cup BBQ sauce
- Salt and pepper to taste
- Optional toppings: red onion, cilantro, avocado
Instructions
- Preheat oven to 400°F (200°C).
- Toss sweet potato with olive oil, salt, and pepper. Roast for 20 minutes.
- Season chicken with salt and pepper.
- Cook chicken in a pan or grill until cooked through.
- Shred or dice chicken.
- Toss chicken with BBQ sauce.
- Assemble bowls with sweet potato and BBQ chicken.
- Add desired toppings.
