Description
A one-pot lasagna soup featuring ground beef, tomatoes, herbs, and lasagna noodles, topped with ricotta and mozzarella cheese.
Ingredients
- 1 tbsp olive oil
- 1 lb ground beef
- 1 yellow onion, chopped
- 2 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 1 (15 ounce) can tomato sauce
- 4 cups beef broth
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes (optional)
- Salt and black pepper to taste
- 8 ounces lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Fresh parsley, chopped, for garnish (optional)
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add ground beef and cook until browned, breaking it apart with a spoon. Drain any excess fat.
- Add chopped onion to the pot and cook until softened, about 5 minutes. Stir in minced garlic and cook for another minute until fragrant.
- Pour in crushed tomatoes, tomato sauce, and beef broth. Add dried basil, dried oregano, and red pepper flakes (if using). Season with salt and black pepper. Bring to a simmer.
- Break lasagna noodles into 2-3 inch pieces and add them to the simmering soup. Stir well to ensure noodles are submerged.
- Cook for 15-20 minutes, or until the noodles are tender, stirring occasionally to prevent sticking.
- While the soup is cooking, in a small bowl, combine ricotta cheese, mozzarella cheese, and Parmesan cheese.
- Ladle the soup into bowls. Top each serving with a dollop of the cheese mixture. Garnish with fresh parsley if desired.
Notes
- Adjust the amount of red pepper flakes to your spice preference.
- For a vegetarian version, omit the ground beef and use vegetable broth, adding extra vegetables like zucchini or bell peppers.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. The noodles will absorb more liquid over time, so you may need to add a splash of broth when reheating.
