Description
A comforting casserole with French onion flavors, featuring chicken, orzo, and caramelized onions.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 large onions, thinly sliced
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 4 cups chicken broth
- 1 cup orzo pasta
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded Gruyere cheese
- 1/4 cup chopped fresh parsley
Instructions
- Caramelize onions in olive oil until golden brown.
- Add garlic and cook for 1 minute.
- Stir in chicken, cook until browned.
- Pour in chicken broth, add thyme, salt, and pepper.
- Bring to a boil, add orzo.
- Simmer until orzo is cooked and liquid is absorbed.
- Top with Gruyere cheese.
- Bake until cheese is melted and bubbly.
- Garnish with parsley.
Notes
- You can substitute Gruyere with Swiss cheese.
- For extra flavor, add a splash of dry white wine to the onions.
