Description
A delicious Blueberry Crumb Coffee Cake perfect for breakfast or dessert.
Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup (1 stick) unsalted butter, cold and cubed
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup fresh blueberries
- 1/2 cup milk
- 1 large egg
- 1 teaspoon vanilla extract
- Crumb Topping:
- 1/2 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/4 cup packed brown sugar
- 1/4 cup (1/2 stick) unsalted butter, cold and cubed
- 1/2 teaspoon ground cinnamon
Instructions
- Preheat oven to 375°F (190°C). Grease and flour a 9×13 inch baking pan.
- Make the crumb topping: In a bowl, combine flour, granulated sugar, brown sugar, and cinnamon. Cut in the cold butter until the mixture resembles coarse crumbs. Set aside.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together milk, egg, and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Gently fold in the blueberries.
- Pour the batter into the prepared pan.
- Sprinkle the crumb topping evenly over the batter.
- Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let cool completely before slicing and serving.
Notes
- For a richer flavor, use brown butter in the crumb topping.
- You can substitute other berries for the blueberries.
- Store leftovers in an airtight container at room temperature.
