Description
These healthy buffalo chicken bowls are an easy meal prep option, featuring tender chicken, fresh vegetables, and a creamy buffalo sauce.
Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup buffalo sauce
- 1/4 cup Greek yogurt or light sour cream
- 1 head romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup shredded carrots
- 1/4 cup crumbled blue cheese (optional)
- 2 tbsp chopped fresh chives or green onions (for garnish)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Pat chicken breasts dry with paper towels. Rub with olive oil, salt, and pepper.
- Place chicken on the prepared baking sheet and bake for 20-25 minutes, or until cooked through and internal temperature reaches 165°F (74°C).
- Remove chicken from oven and let rest for 5 minutes. Shred or dice the chicken.
- In a medium bowl, combine buffalo sauce and Greek yogurt. Add the shredded chicken and toss to coat evenly.
- Divide chopped romaine lettuce among four meal prep containers.
- Top each container with buffalo chicken, cherry tomatoes, and shredded carrots.
- If desired, sprinkle with crumbled blue cheese and fresh chives or green onions before serving or packing for meal prep.
Notes
- Store bowls in the refrigerator for up to 3-4 days.
- For extra heat, add a pinch of cayenne pepper to the buffalo sauce.
- Serve with a side of whole wheat pita bread or a sprinkle of toasted seeds for added crunch.
