Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 1 packet taco seasoning
  • 1 cup water
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 cup salsa
  • 2 cups shredded cheddar cheese
  • Optional toppings: sour cream, guacamole, chopped tomatoes, shredded lettuce


Instructions

  1. Brown ground beef in a large skillet over medium heat. Drain off any grease.
  2. Add onion and cook until softened.
  3. Stir in taco seasoning and water. Bring to a simmer.
  4. Add black beans, corn, and salsa. Cook for 5 minutes, stirring occasionally.
  5. Sprinkle with cheddar cheese. Cover and cook until cheese is melted.
  6. Top with your favorite toppings and serve.

Notes

  • You can substitute ground turkey or chicken for ground beef.
  • Add a can of diced tomatoes and green chilies for extra flavor.
  • For a spicier dish, use hot salsa or add a pinch of cayenne pepper.
