A flavorful and healthy Chipotle Chicken Sweet Potato Bowl.
Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tbsp chipotle peppers in adobo sauce, minced
- 1 tsp chili powder
- 1/2 tsp cumin
- Salt and pepper to taste
- 2 large sweet potatoes, peeled and cubed
- 1 red onion, diced
- 1 bell pepper, diced
- 1 cup cooked quinoa
- 1 avocado, sliced
- Fresh cilantro, chopped
- Lime wedges
Instructions
- Season chicken with salt, pepper, chili powder, and cumin.
- Heat olive oil in a skillet. Cook chicken until done.
- Add chipotle peppers to the skillet and cook for 1 minute.
- Roast sweet potatoes, red onion, and bell pepper.
- Assemble bowls with quinoa, sweet potatoes, chicken, and toppings.
