Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tbsp chipotle peppers in adobo sauce, minced
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 2 large sweet potatoes, peeled and cubed
  • 1 red onion, diced
  • 1 bell pepper, diced
  • 1 cup cooked quinoa
  • 1 avocado, sliced
  • Fresh cilantro, chopped
  • Lime wedges


Instructions

  1. Season chicken with salt, pepper, chili powder, and cumin.
  2. Heat olive oil in a skillet. Cook chicken until done.
  3. Add chipotle peppers to the skillet and cook for 1 minute.
