Description
Make delicious bakery-style cinnamon streusel Greek yogurt muffins. These muffins are soft, flavorful, and perfect for breakfast or a snack.
Ingredients
- 1 3/4 cups all-purpose flour
- 3/4 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 cup Greek yogurt
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
Streusel:
- 1/2 cup all-purpose flour
- 1/4 cup packed brown sugar
- 1/4 cup granulated sugar
- 1/4 teaspoon ground cinnamon
- 1/4 cup cold unsalted butter, cut into small pieces
Instructions
- Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners.
- Make the streusel: In a bowl, combine flour, brown sugar, granulated sugar, and cinnamon. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- In a large bowl, whisk together flour, granulated sugar, baking powder, baking soda, salt, and cinnamon.
- In a separate bowl, whisk together Greek yogurt, milk, oil, egg, and vanilla extract.
- Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
- Fill each muffin liner about 2/3 full.
- Sprinkle the streusel topping evenly over the muffins.
- Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
- For a richer flavor, use full-fat Greek yogurt.
- You can add a pinch of nutmeg to the streusel for extra warmth.
- Store leftover muffins in an airtight container at room temperature for up to 3 days.
