Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 8 cups vegetable broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup green beans, cut into 1-inch pieces
  • 1 cup corn kernels
  • 1 cup peas
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery; cook until softened, about 5-7 minutes.
  3. Stir in garlic and cook for 1 minute more.
  4. Pour in vegetable broth and diced tomatoes.
  5. Add green beans, corn, peas, thyme, and basil.
  6. Season with salt and pepper.
  7. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until vegetables are tender.
  8. Serve hot.
