Description
A comforting and classic homemade vegetable soup, just like grandma used to make.
Ingredients
- 2 tbsp olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 8 cups vegetable broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 cup green beans, cut into 1-inch pieces
- 1 cup corn kernels
- 1 cup peas
- 1 tsp dried thyme
- 1 tsp dried basil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery; cook until softened, about 5-7 minutes.
- Stir in garlic and cook for 1 minute more.
- Pour in vegetable broth and diced tomatoes.
- Add green beans, corn, peas, thyme, and basil.
- Season with salt and pepper.
- Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until vegetables are tender.
- Serve hot.
Notes
- Add other vegetables like zucchini or potatoes.
- Adjust seasonings to your liking.
- Garnish with fresh parsley before serving.
