Description

A flavorful and healthy one-pan chicken dish with coconut milk and lime.


Ingredients

  • 1.5 lbs chicken breasts, cut into 1-inch pieces
  • 1 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (13.5 ounce) can coconut milk
  • 1/4 cup lime juice
  • 1 tbsp coconut aminos
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season chicken with salt, pepper, and chili powder.
  3. Add chicken to the skillet and cook until browned, about 5-7 minutes.
  4. Add bell peppers and onion to the skillet and cook until softened, about 5 minutes.
  5. Stir in garlic and cook for 1 minute.
  6. Pour in coconut milk, lime juice, and coconut aminos.
  7. Bring to a simmer and cook until the chicken is cooked through and the sauce has thickened, about 10-15 minutes.
  8. Garnish with fresh cilantro.
  9. Serve hot.

Notes

  • Serve with rice, quinoa, or cauliflower rice.
  • Add a pinch of red pepper flakes for extra heat.
