Description
A flavorful and healthy one-pan chicken dish with coconut milk and lime.
Ingredients
- 1.5 lbs chicken breasts, cut into 1-inch pieces
- 1 tbsp olive oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (13.5 ounce) can coconut milk
- 1/4 cup lime juice
- 1 tbsp coconut aminos
- 1 tsp chili powder
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Season chicken with salt, pepper, and chili powder.
- Add chicken to the skillet and cook until browned, about 5-7 minutes.
- Add bell peppers and onion to the skillet and cook until softened, about 5 minutes.
- Stir in garlic and cook for 1 minute.
- Pour in coconut milk, lime juice, and coconut aminos.
- Bring to a simmer and cook until the chicken is cooked through and the sauce has thickened, about 10-15 minutes.
- Garnish with fresh cilantro.
- Serve hot.
Notes
- Serve with rice, quinoa, or cauliflower rice.
- Add a pinch of red pepper flakes for extra heat.
- Adjust the lime juice to your taste.
