Description

A delicious and healthy bowl featuring flaky salmon, flavorful coconut rice, and fresh toppings.


Ingredients

  • 1 cup Basmati Rice
  • 1 1/2 cups Coconut Milk
  • 1 cup Water
  • 1/2 tsp Salt
  • 1 lb Salmon Fillet
  • 1 tbsp Olive Oil
  • 1 tsp Paprika
  • 1/2 tsp Garlic Powder
  • Salt and Pepper to taste
  • Toppings: Avocado, Cucumber, Mango, Green Onions, Sesame Seeds, Sriracha Mayo


Instructions

  1. Rinse rice.
  2. Combine rice, coconut milk, water, and salt in a pot. Bring to a boil, then simmer until cooked.
  3. Preheat oven to 400°F (200°C).
  4. Season salmon with olive oil, paprika, garlic powder, salt, and pepper.
  5. Bake salmon for 12-15 minutes, or until cooked through.
  6. Assemble bowls with coconut rice, salmon, and desired toppings.

Notes

  • Adjust spice levels with Sriracha Mayo.
