Description
A healthy, high-protein meal prep recipe featuring chicken, corn, and rice bowls.
Ingredients
- 1 tbsp olive oil
- 1 yellow onion, diced
- 2 cloves garlic, minced
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/4 tsp smoked paprika
- Salt and black pepper to taste
- 1 cup frozen corn
- 1 cup cooked black beans, rinsed and drained
- 1/4 cup chopped fresh cilantro
- 2 cups cooked brown rice
- Optional toppings: avocado, salsa, Greek yogurt or sour cream
Instructions
- Heat olive oil in a large skillet or pot over medium heat. Add diced onion and cook until softened, about 5-7 minutes.
- Add minced garlic and cook for 1 minute more until fragrant.
- Add chicken cubes to the skillet. Season with chili powder, cumin, smoked paprika, salt, and pepper. Cook, stirring occasionally, until chicken is browned and cooked through, about 8-10 minutes.
- Stir in frozen corn and black beans. Cook for 3-5 minutes, until heated through.
- Remove from heat and stir in fresh cilantro.
- Divide cooked brown rice among four meal prep containers. Top with the chicken and corn mixture.
- Store in the refrigerator for up to 4 days. When ready to serve, reheat and add optional toppings like avocado, salsa, or Greek yogurt.
