Corn Chicken Rice Bowls (Meal Prep)

Description

A healthy, high-protein meal prep recipe featuring chicken, corn, and rice bowls.


Ingredients

  • 1 tbsp olive oil
  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/4 tsp smoked paprika
  • Salt and black pepper to taste
  • 1 cup frozen corn
  • 1 cup cooked black beans, rinsed and drained
  • 1/4 cup chopped fresh cilantro
  • 2 cups cooked brown rice
  • Optional toppings: avocado, salsa, Greek yogurt or sour cream


Instructions

  1. Heat olive oil in a large skillet or pot over medium heat. Add diced onion and cook until softened, about 5-7 minutes.
  2. Add minced garlic and cook for 1 minute more until fragrant.
  3. Add chicken cubes to the skillet. Season with chili powder, cumin, smoked paprika, salt, and pepper. Cook, stirring occasionally, until chicken is browned and cooked through, about 8-10 minutes.
  4. Stir in frozen corn and black beans. Cook for 3-5 minutes, until heated through.
  5. Remove from heat and stir in fresh cilantro.
  6. Divide cooked brown rice among four meal prep containers. Top with the chicken and corn mixture.
  7. Store in the refrigerator for up to 4 days. When ready to serve, reheat and add optional toppings like avocado, salsa, or Greek yogurt.
