Description
A classic breakfast dish featuring corned beef, potatoes, and onions.
Ingredients
- 1 tablespoon olive oil
- 1 large onion, chopped
- 1 pound cooked corned beef, diced
- 2 cups cooked potatoes, diced
- Salt and pepper to taste
- Optional: 1/2 cup chopped bell pepper
- Optional: 1/4 cup chopped fresh parsley
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add onion and cook until softened, about 5 minutes.
- Add corned beef, potatoes, and bell pepper (if using). Cook, stirring occasionally, until heated through and slightly browned, about 10-15 minutes.
- Season with salt and pepper to taste.
- Stir in parsley (if using) before serving.
- Serve immediately.
Notes
- You can use leftover corned beef and potatoes to save time.
- Feel free to add other vegetables, such as diced carrots or celery.
- Serve with a fried egg on top for extra flavor.
