Description
A delicious and healthy Creamy Dijon Chicken Bowl.
Ingredients
- Chicken breast: 6 oz
- Sweet potato: 1 medium
- Broccoli florets: 1 cup
- Dijon mustard: 2 tbsp
- Heavy cream: 1/4 cup
- Olive oil: 1 tbsp
- Salt and pepper: to taste
- Garlic: 1 clove, minced
Instructions
- Preheat oven to 400°F (200°C).
- Cube sweet potato and toss with olive oil, salt, and pepper. Roast for 20 minutes.
- Season chicken with salt and pepper. Cook in a pan until done.
- Steam broccoli.
- In the same pan, add minced garlic, Dijon mustard, and heavy cream.
- Simmer until sauce thickens.
- Assemble the bowl with sweet potato, broccoli, chicken, and sauce.
