Ingredients

  • Chicken breast: 6 oz
  • Sweet potato: 1 medium
  • Broccoli florets: 1 cup
  • Dijon mustard: 2 tbsp
  • Heavy cream: 1/4 cup
  • Olive oil: 1 tbsp
  • Salt and pepper: to taste
  • Garlic: 1 clove, minced


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cube sweet potato and toss with olive oil, salt, and pepper. Roast for 20 minutes.
  3. Season chicken with salt and pepper. Cook in a pan until done.
  4. Steam broccoli.
  5. In the same pan, add minced garlic, Dijon mustard, and heavy cream.
  6. Simmer until sauce thickens.
  7. Assemble the bowl with sweet potato, broccoli, chicken, and sauce.
