A simple and delicious recipe for creamy garlic shrimp served over fluffy mashed potatoes.
Ingredients
- 1 lb large shrimp, peeled and deveined
- 4 cloves garlic, minced
- 2 tbsp butter
- 1 tbsp olive oil
- 1/2 cup heavy cream
- 1/4 cup chicken broth
- 2 tbsp chopped fresh parsley
- Salt and pepper to taste
- 1 lb potatoes, peeled and cubed
- 1/4 cup milk
- 2 tbsp butter
- Salt to taste
Instructions
- Boil potatoes until tender. Mash with milk and butter. Season with salt.
- Heat butter and olive oil in a skillet over medium heat.
- Add minced garlic and cook until fragrant, about 1 minute.
- Add shrimp to the skillet. Cook for 2-3 minutes per side, until pink and cooked through.
- Pour in heavy cream and chicken broth. Stir and simmer for 2-3 minutes until sauce thickens slightly.
- Stir in fresh parsley. Season with salt and pepper.
- Serve the creamy garlic shrimp over the mashed potatoes.
Notes
- For extra flavor, add a pinch of red pepper flakes to the shrimp.
- You can use half-and-half instead of heavy cream for a lighter sauce.
- Ensure shrimp are not overcooked to maintain tenderness.
