Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth
  • 2 tbsp chopped fresh parsley
  • Salt and pepper to taste
  • 1 lb potatoes, peeled and cubed
  • 1/4 cup milk
  • 2 tbsp butter
  • Salt to taste


Instructions

  1. Boil potatoes until tender. Mash with milk and butter. Season with salt.
  2. Heat butter and olive oil in a skillet over medium heat.
  3. Add minced garlic and cook until fragrant, about 1 minute.
  4. Add shrimp to the skillet. Cook for 2-3 minutes per side, until pink and cooked through.
  5. Pour in heavy cream and chicken broth. Stir and simmer for 2-3 minutes until sauce thickens slightly.
  6. Stir in fresh parsley. Season with salt and pepper.
  7. Serve the creamy garlic shrimp over the mashed potatoes.
