Description
A comforting and flavorful Creamy Tomato Basil Soup.
Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 (28 ounce) cans crushed tomatoes
- 4 cups vegetable broth
- 1 cup fresh basil leaves, plus more for garnish
- 1/2 cup heavy cream
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and cook until softened. Add garlic and cook for 1 minute.
- Stir in crushed tomatoes and vegetable broth. Bring to a simmer.
- Add basil, salt, and pepper. Simmer for 15 minutes.
- Remove from heat and stir in heavy cream.
- Blend with an immersion blender until smooth.
- Garnish with fresh basil.
Notes
- Adjust seasonings to your liking.
- For a vegan version, substitute the heavy cream with full-fat coconut milk.
- Serve with grilled cheese sandwiches for a classic pairing.
