Description
A rich and flavorful soup with sausage, spinach, and tortellini.
Ingredients
- 1 pound Italian sausage
- 1 onion, chopped
- 2 cloves garlic, minced
- 6 cups chicken broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 teaspoon dried basil
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
- 9 ounces cheese tortellini
- 5 ounces fresh spinach
- 1/2 cup heavy cream (optional)
- Grated Parmesan cheese, for serving
Instructions
- Brown sausage in a large pot or Dutch oven. Drain any excess grease.
- Add onion and cook until softened. Stir in garlic and cook for 1 minute.
- Pour in chicken broth and diced tomatoes. Season with basil, oregano, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Add tortellini and cook according to package directions.
- Stir in spinach and cook until wilted.
- If desired, stir in heavy cream.
- Serve hot, topped with Parmesan cheese.
Notes
- Adjust seasonings to your preference.
- You can use fresh or frozen tortellini.
- For a vegetarian version, substitute the sausage with a plant-based alternative.
