Description

A rich and flavorful soup with sausage, spinach, and tortellini.


Ingredients

  • 1 pound Italian sausage
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • 9 ounces cheese tortellini
  • 5 ounces fresh spinach
  • 1/2 cup heavy cream (optional)
  • Grated Parmesan cheese, for serving


Instructions

  1. Brown sausage in a large pot or Dutch oven. Drain any excess grease.
  2. Add onion and cook until softened. Stir in garlic and cook for 1 minute.
  3. Pour in chicken broth and diced tomatoes. Season with basil, oregano, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 15 minutes.
  5. Add tortellini and cook according to package directions.
  6. Stir in spinach and cook until wilted.
  7. If desired, stir in heavy cream.
  8. Serve hot, topped with Parmesan cheese.

Notes
