Description

A fun and spooky pasta salad perfect for Halloween parties, featuring mozzarella eyeballs and vibrant vegetables.


Ingredients

  • 200g pasta (rotini or fusilli)
  • 150g mini mozzarella balls
  • 1 black olive, sliced into rounds
  • Cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 50g black olives, sliced
  • 50g green olives, sliced
  • Fresh basil leaves, chopped
  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp Italian seasoning
  • Salt and pepper to taste


Instructions

  1. Cook pasta according to package directions. Drain and rinse with cold water.
  2. While pasta cooks, prepare the vegetables: halve cherry tomatoes, dice cucumber, red bell pepper, and yellow bell pepper. Slice the black olive for the eyeballs.
  3. In a large bowl, combine the cooked pasta, diced cucumber, red bell pepper, yellow bell pepper, halved cherry tomatoes, sliced black olives, and green olives.
  4. Add chopped fresh basil.
  5. In a small bowl, whisk together olive oil, balsamic vinegar, Italian seasoning, salt, and pepper.
  6. Pour the dressing over the pasta and vegetables. Toss gently to combine.
  7. To create the mozzarella eyeballs, place a slice of black olive on top of each mozzarella ball.
  8. Arrange the mozzarella eyeballs on top of the salad just before serving.

Notes

  • For extra creepiness, you can add a few more black olive slices to resemble pupils on some mozzarella balls.
  • Adjust salt and pepper to your preference.
  • This salad can be made a few hours ahead of time, but add the mozzarella eyeballs just before serving to keep them fresh.
