Ingredients
- 1 pound large shrimp, peeled and deveined
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup cornstarch
- 1 cup water
- 2 cups shredded coconut
- Oil for frying
- For the white sauce:
- 1/2 cup mayonnaise
- 1/4 cup sugar
- 2 tablespoons rice vinegar
- 1 tablespoon water
Instructions
- Prepare the shrimp: Pat the shrimp dry.
- Make the batter: In a bowl, whisk together flour, salt, and pepper. Add cornstarch and water, mix until smooth.
- Coat the shrimp: Dip each shrimp into the batter, then coat with shredded coconut.
- Fry the shrimp: Heat oil in a deep fryer or large pot to 350°F (175°C). Fry shrimp in batches until golden brown and crispy, about 2-3 minutes per batch.
- Make the white sauce: Whisk together mayonnaise, sugar, rice vinegar, and water.
- Serve: Serve the crispy coconut shrimp hot with the white dipping sauce.
Notes
- Ensure the oil is hot before frying to get a crispy result.
- Don’t overcrowd the fryer, cook in batches.
